Count of Sulfite-Reducing Anaerobic Bacteria in Food


Sulfide-reducing anaerobes are an indicator of groundwater and drinking water pollution. Advanced laboratories provide anhydrous culture media for the enrichment, isolation and enumeration of sulfide-reducing anaerobic bacteria (clostridia), meeting the microbiological testing needs of businesses in the food industry.

Clostridia are anaerobic pathogens and among obligate anaerobes as oxygen is toxic to them and most of its species are gram positive. It is found in decaying vegetation, marine sediment, soil, and intestinal tracts of humans and other vertebrates. Most Clostridia species are not pathogenic, but some produce very potent biological toxins. Clostridia perfingens causes food poisoning, clostridia tetani causes tetanus infections and clostridia botulinum causes botulism.

Spores of sulfide-reducing anaerobes (clostridia) are quite common in the environment. It is found in human and animal feces, waste water and soil. Spores are more resistant to the effects of chemical and physical factors than vegetative forms and survive in water for a long time. Therefore, it is an important indicator of groundwater and drinking water pollution. Sulfide-reducing clostridia reduce sulfite at 37 degrees Celsius within 24 hours. Clostridium perfringens is the most important organism of this species and is commonly associated with fecal contamination.

Sulfide-reducing microorganisms are common in anaerobic environments where they help degrade organic materials. Toxic hydrogen sulfide is a waste product of sulfite-reducing microorganisms, and the smell of rotten eggs indicates the presence of sulfite-reducing microorganisms in nature. Sulfide-reducing microorganisms are responsible for the sulfurous odor of salt marshes and mud flats.
