Nitrate and nitrite are used in foods for the following purposes:
- Preserving flesh color
- Adding flavor to meat
- Providing microbial protection
- To prevent oxidative deterioration
Nitri and nitrate are used in foods. However, it should be used within the limits determined by the Turkish Food Codex. In order to keep this situation under control, nitrate and nitrite determination is a test parameter that should be performed especially in meat and meat products.
